Tasting Note

The bouquet is a complex array of dark fruits, spice with thyme, earthy notes and cedar oak.

The palate is tight yet rich with dark plums and cherries. This gives way to spice and savoury flavours with a long cedar oak
finish.

The wine displays great acid/tannin balance which will allow the wine to age gracefully over 10 to 15 years.

Technical Note

Winemaking Region: Bellarine Peninsula, Victoria.

Clone: MV6

Winemaking: Fruit was hand-picked and de-stemmed to small 3
tonne open fermenters and cold soaked for 5 days. Fermentation was wild with the temperature peaking at 28 degrees. The wine was hand-plunged once a day and pressed at dryness. It then underwent malolactic fermentation in barrel where it was left maturing for 15 months. It was then blended filtered and bottled.

Oak Use: 15 months in 50% new and 50% 1 year old French
oak barriques.

A single-vineyard pinot planted to the popular MV6 clone. Destemmed fruit, cold soaked for 5 days, wild-yeast fermented then mlf and 15 months in French oak puncheons (one-third new). A densely packed pinot with all the flavour you need but also a fineness, a delicacy. Red fruits, dark cherries, spice-dusted oak. Fine, close-knit tannins bring freshness, purpose and the potential for further ageing.
