Our Chefs Hamish and Kaspar have sourced special grain-fed Angus Porterhouse from O’Connor Beef in Gippsland this week.
They are chargrilling it to perfection and serving it with a delicious Roquefort cheese butter, red wine jus’ and a potato rosette.
The marbled, rich, hearty texture of Grain-fed Angus Porterhouse pairs perfectly with the 2017 Cornelius Spray Farm Syrah’s tannic structure.
The Roquefort cheese butter is a masterpiece of bold flavours, tangy notes, saltiness, and a subtle sweetness offering delicate contrast. Cornelius Syrah is a ripe and complex wine displaying blueberry and dark cherry fruits, spice and pepper with cedar oak. A wine that can stand up to the intense cheese flavours, creating a balanced and harmonious pairing.
