This is a ripe and complex wine displaying blueberry and dark cherry fruits, spice and pepper with cedar oak.
Cellar from 2023 to 2035.
An opulent bouquet of blueberry and dark cherry fruits with spice, pepper and chocolate notes. This is framed by autumnal characters and gun smoke oak. The palate is rich with dark fruits and cherries, pepper notes and a hint of earthiness. The mid palate has chocolate flavours with autumnal notes flowing through to cedar and gun smoke oak on the finish.
Winemaking Region: Bellarine Peninsula, Victoria. - Clone: PT23 .- Harvest Date: 23/03/15. - Yield: 2.15 kg/vine, 2.15 tn/ac, 5.4 tn/ha, 37.8 hl/ha. - Oak Use: Spent 18 months in 50% new and 50% 1 year old French oak barriques. - Winemaking: The fruit was hand picked and de-stemmed to small 3 tonne open fermenters which included 25% whole bunches. Fermentation was wild with the temperature peaking at 28 degrees. The wine was hand plunged once a day and pressed at dryness. It then underwent a wild malolactic fermentation in barrel where it was left maturing. After 18 months the wine was blended, fined, filtered and bottled.
