Complex bouquet displaying white and yellow peach fruits with spice, a hint of match stick rounded out by creamy and nutty barrel ferment notes. The palate is restrained with a mineral backbone. Peach and melon fruits, spice as well as creamy flavours dominate the palate with a flinty and nutty oak finish.
The wine is still in its infancy and will reward cellaring for another 5 to 10 years.
Winemaking Region: Bellarine Peninsula, Victoria. - Clone: I10V5 - Soil Type: Self mulching black vertosol derived from tertiary basalt. - Harvest Date: 07/03/16. - Yield: 1.8kg/vine, 1.8tn/acre 4.5tn/ha, 31.7 hl/ha. Oak Use: 15 months in 50% new and 50% 1 year old French barriques. Hand picked, whole bunch pressed with free run juice to barrel, medium solids retained in juice, wild fermentation then took place over 2 weeks. The yeast less were stirred monthly over the next 6 months while maturing in barrel. After 15 months the wine was blended, fined filtered and bottled.
