An opulent and complex bouquet displaying red plum and strawberry fruits with spice, earthy forest floor notes rounded out by cedar oak. The palate is rich with a velvet texture of plum and cherry fruits, spice and savoury flavours which is complemented by a long cedar oak finish. The acid/tannin balance is sublime with the wine drinking beautifully now but will reward further cellaring over the coming 8 to 10 years.
Winemaking Region: Bellarine Peninsula, Victoria. - Clone: 114, 115, MV6. - Soil Type: Self mulching black vertosol derived from tertiary basalt. - Harvest Date: 11/03/15 - Yield: 2.75 kg Vine, 2.75 tn/acre, 26.9 tn/ha, 48.3 hl/ha. Oak Use: 16 months in Troncais barriques, 1/3 new, 1/3 one and 1/3 two year old. - Winemaking: Hand picked at optimal ripeness. Destemmed to a small 3 tonne open fermenter and cold soaked for 5 days before fermentation occurred using wild yeasts. The must was hand plunged once a day over 10 days till dryness. Pressed to barrel where it spent 18 months. It was then blended, fined, filtered and bottled.
