The bouquet is a complex array of dark fruits, spice with thyme, earthy notes and cedar oak. The palate is tight yet rich with dark plums and cherries. This gives way to spice and savoury flavours with a long cedar oak finish.
The wine displays great acid/tannin balance which will allow the wine to age gracefully over 10 to 15 years.
Winemaking Region: Bellarine Peninsula, Victoria. - Clone: MV6. - Soil Type: Self mulching black vertosol derived from tertiary basalt. - Harvest Date: 29/03/14 - Yield: 0.95 kg Vine, 0.95 tn/acre, 2.38 tn/ha, 16.6 hl/ha. - Post Bottling: 13.5% alc, 3.51 pH, 6.0 g/l acid. - Oak Use: 18 months in Troncais barriques, 1/3 new, 1/3 one and 1/3 two year old. - Winemaking: Hand picked at optimal ripeness. Destemmed to a small 3 tonne open fermenter and cold soaked for 5 days before fermentation occurred using wild yeasts. The must was hand plunged once a day over 10 days till dryness. Pressed to barrel where it spent 18 months. It was then blended, fined, filtered and bottled.
