Rich and powerful bouquet showing dark plum and cherry fruits with spice, bramble notes, earthy characters with cedar oak. A brooding wine with dark fruits dominating the palate with layers of spice, earthy flavours and cedar oak. This is a powerful Pinot Noir with plenty of ripe tannins and firm acid giving the wine great structure and depth.
Winemaking Region: Bellarine Peninsula, Victoria. - Clone: MV6. - Soil Type: Self mulching black vertosol derived from tertiary basalt. - Harvest Date: 03/04/14 - Yield: 1.07 kg Vine, 1,07 tn/acre, 2.68 tn/ha, 18.7 hl/ha. - Post Bottling: 13.5% alc, 3.48 pH, 6.2 g/l acid. - Oak Use: 16 months in Troncais barriques 1/3 new, 1/3 one and 1/2 two year old. - Winemaking: Hand picked at optimal ripeness. 100% destemmed to a small 3 tonne open fermenter and soaked for 5 days before fermentation started by wild yeast. The must was hand plunged daily over the 2 week period the wine was in tank. Pressed to barrel where it spent 16 months. it was then blended, filtered and bottled.
