2012 Cornelius Norfolk Pinot Noir
Mid garnet with a slight brick hue. Complex nose with lifted scents of plums and strawberries, beetroot, savoury and earthy notes with sappy whole bunch characters. Savoury-sweet palate with plum and strawberry fruits, earthy flavours and a sappy mid palate with spice oak finish. Supple acid and long fine tannins give the wine its structure, balance and power.
The fruit was hand-picked at optimal ripeness and 25% whole bunches were placed at the bottom of a 3 tonne fermenter, with the balance of fruit crushed on top. Soaked for 5 days prior to fermentation started by wild yeasts. The must was hand plunged once a day over 10 days till dryness. Pressed to barrel where the wine spent 18 months in a mixture of new, one and two-year-old French oak barriques.
